These juices are so versatile! What juices you ask? Lumi Juice of course! Did you see there’s a dedicated section for me on their site?! I love their product – drinking it straight and cooking with it! This week I created something deliciously Indian with their Belmont Beet juice. Belmont Beet has a very refreshing combination of ingredients, so I thought it will go really well in a lassi! Lassi is a yogurt based Indian drink. Traditional flavors include sweet, salty, mango or rose. I wanted to recreate this with Lumi juice, but also keep it vegan! Check out my recipe below – perfect as a morning drink or afternoon pick-me-up!
Belmont Beet Lassi
- 1 Belmont Beet juice
- 1 cup nondairy coconut yogurt
- 2 tsp agave (or to taste)
- 5-6 fresh mint leaves
- 1/8 tsp Fresh Cardamom powder
1. Blend all ingredients together except the cardamom. Once the lassi is smooth, strain through a fine mesh strainer and top with cardamom. Makes enough for about 2 lassis (or in my case, 1 giant lassi that I sip on my way to grand central).
