Birria Tacos | MAKE IT VEGAN

Birria Tacos, but MAKE IT VEGAN! Sounds like an oxymoron, right? Hailing from Jalisco, Mexico, Birria Tacos are normally made with pork or beef and simmered in a super aromatic broth or consomé of chilies, warm spices, garlic, onion and tomato. I have never eaten Birria Tacos before, but that doesn’t mean I can’t try my chef-y hand at making them! I had some assistance in the kitchen today to recreate this Mexican old-world classic into a modern-age plant-based version! Let me tell you – the aromas are to die for! You’ll have all your friends running to your kitchen begging for some MIV Birria Tacos! Let me know in the comments if you’ve eaten Birria before and what you think!

Birria ‘Jackfruit’ Tacos:

  • 2 roma tomatoes – quartered
  • 1 medium yellow onion – quartered
  • 4-5 cloves of garlic – peeled
  • 1 cinnamon stick
  • 2 cloves
  • 2 guajillo chilies
  • 2 ancho chilies
  • 1-2 chile de arbol
  • 2 bay leaves
  • 1/2 tsp whole black peppercorn
  • 1/2 tsp Mexican oregano
  • 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1 can large can or 2 cups frozen jackfruit
  • 3-4 cups of water

1. De-seed and de-stem all of the chilies. Add all of the ingredients to a large pot. Cover with water and simmer for 30 minutes until everything has broken down and is fragrant.

2. Remove the jackfruit, bay leaf, cinnamon stick and cloves. Then blend the consomé until smooth and run through a sieve. Reserve some consomé on the side.

3. Shred the jackfruit apart into smaller pieces. Add back into the consomé and simmer on low. In the meantime, prepare your tortillas.

Assembly Ingredients:

  • Fresh Tortillas
  • 1 small yellow onion – diced
  • 1 fresh lime
  • 1/4 cup fresh cilantro – minced
  • Oaxaca cheese or vegan mozzarella shreds

1. Dip the tortilla in the consomé and place on a large hot skillet. Fill one half with the jackfruit mixture and cheese. Close shut and grill on both sides until slightly golden. Remove and repeat with the other tortillas.

2. Meanwhile mix together onion, lime juice and cilantro.

2. Top with onion mixture and serve with consomé.
