Well, here’s a tip on how to keep green vegetables- asparagus, broccoli, green beans, etc- vibrant, tasty and appealing. Usually in most Indian vegetable dishes, the veggies are boiled/blanched before sauteing. This allows the vegetables to cook so it’s not raw and tasteless when served. How do I keep my vegetables looking pretty and green? Baking soda!
Add a pinch of baking soda to your vegetables as they boil- it’ll keep them a vibrant green color and firm on the outside yet soft on the inside. Did I mention it’ll cut your cooking time? Give it a shot, let me know how it goes!
