Do you ever just crave something creamy, indulgent, and sweet, but guilt-free?! Well, welcome to everyday of Chef Priyanka! I have been consuming their delish products (see what I did there?) for years. And I’m so excited about their line-up of frozen desserts and yogurt; completely free of dairy and 100% vegan! Their coco whip makes me nostalgic for my momma’s fruit salad – she would combine canned fruits with cool whip and vanilla yogurt to create this airy, but at the same time creamy dessert – and their yogurts satisfy that creamy crave that I so often get! All that said, I just knew that I had to combine some of my favorite ingredients like sweet mango and warm cardamom with my favorite So Delicious products to create a scrumptious “Fridge to Freezer” Mango Cardamom Chia Pudding Parfait. It takes no more than an hour from Fridge to Freezer to your tummy!
Mango Cardamom Chia Pudding Parfaits: #sponsored
(serves 2)
Cardamom Simple Syrup:
- 1/2 cup sugar
- 1/2 cup water
- 2 cardamom pods
Cardamom Coco Whip:
- 1/2 cup So Delicious Coco Whip
- 1/8 tsp ground cardamom
Mango Chia Pudding:
- 1 cup So Delicious Mango Oatmilk Yogurt
- 1/4 cup chia seeds
- 2-3 tbsp cardamom syrup
- 1/4 cup So Delicious Unsweetened Coconut Milk
Layering & Garnish:
- 1/2 cup diced fresh mango
- dried rose petals
- ground cardamom
1. For simple syrup: bring water, sugar & cardamom pods to a boil – stirring occasionally. Then reduce to a simmer and let it cook down until it thickens to a syrup consistency – about 10/15 minutes. Remove and allow to completely cool. Store in a mason jar in the fridge until ready to use.
2. Mix together So Delicious Coco Whip with ground cardamom. Place in freezer until ready to use.
3. Mix together So Delicious Mango Oatmilk Yogurt with the remaining ingredients until well combined. Consistency should be slightly liquidy as the chia seeds will swell up and thicken the pudding. Cover and place in refrigerator for at least 30 minutes until completely thick.
4. Layer pudding parfaits: in a cocktail/wine glass, start layering the pudding starting with the chia pudding, then diced mango, then chia pudding again, another mango layer and top each one with the cardamom coco whip. Garnish with ground cardamom and rose petals. Serve immediately!
