Do you need a little perk-me-up in the morning? No, I’m not talking about THAT kind – get your head outta the gutter. I’m talking about something filling, healthy and slightly sweet & slight spicy to get your day going. Then you’re going to want to make this Up Beet Chia Pudding with Lumi Juice UpBeet Pear Juice! This juice combines a few juices, pear and beet being among them, with a few surprising ingredients that I love – cilantro and jalapeño! Pretty sure it should be called the “UpBeet PRI Juice” hehe. It reminds a deliciously healthy and gorgeous guacamole, but with so many more opportunities! I used that opportunity to create a quick breakfast pudding that can be easily made the night before and in a large batch so you can enjoy it throughout the week! I packed mine up in mason jars and took them to work 🙂

- 1/4 cup coconut milk

- 1-2 golden kiwis – sliced
- shredded coconut – for garnishing
