
It is HOT this summer. No question about it. And while we’re all home with our loved ones, it’s fun to find creative, healthy, and plant-based ways to cool off! And usually this time of year I’m traveling! But alas, the travels have paused. That doesn’t mean we can’t bring a little travel-inspired fun home! That’s why when I discovered V8 +HYDRATE®, I absolutely LOVED it. I’m not kidding – I introduced it to all of my family and friends! I love that it’s plant-based and has natural electrolytes from veggies!

So I just had to pair it with one of my summery drinks (which is inspired by my frequent trips to Miami) – a Watermelon”Miami Vice”! Half sweet coconuty-rum, half rose-scented watermelon & V8 +HYDRATE® Strawberry Cucumber for that fresh & delicious taste. V8 +HYDRATE®-infused Watermelon “Miami Vice” cocktail: (serves 2)
● 1 can V8 +HYDRATE® Strawberry Cucumber
● 2 cups Frozen Unsweetened Coconut Milk Cubes
● Splash of cold unsweetened coconut milk
● 1 cup Fresh Watermelon – pureed
● 1/2 tsp Rose Essence/Water
● 1 tsp Light Agave
● 1 tsp Dried Rose Petals (for garnishing)
● 4 oz Light Rum
1. In a blender, blend together the coconut milk ice cubes, agave, and a splash of coconut milk & rum until smooth. It will have a slushy-like consistency.
2. In a pitcher/tall cocktail stirring glass, mix together watermelon puree, rose essence, and half a can of
V8 +HYDRATE® Strawberry Cucumber drink.
3. In a tall clear glass (I use a highball glass), pour in coconut milk mixture about 1/3 way up, then alternate with watermelon mixture, then coconut and finish with watermelon. Top off with a bit more V8 and garnish with dried rose petals.
